Basmati Rice

Perfect fluffy Basmati.

1. Rinse. Rinse 1 cup of rice under cold water until it runs clear to remove surface starch.
2. Soak. Soak for 20–30 minutes for maximum elongation, then drain.
3. Boil. Add to 1¾ cups water (1:1.75), a pinch of salt, and bring to a boil.
4. Simmer. Cover, reduce to low, and cook 12–15 minutes until water is absorbed.
5. Rest & fluff. Rest off heat 5 minutes, then fluff with a fork and serve.
